This great old fashioned meal is the perfect way to use up leftover chicken. I often pull out the recipe after a busy day because I can put it together in minute. Add a salad or cook some peas and you've got a home cooked meal in 15 minutes. We love it over biscuits or waffles, but you can also enjoy it over rice, mashed potatoes or toast.
- 6 Tbs. butter or chicken fat 
- 6 Tbs. flour 
- 1 tsp. salt 
- 1/4 tsp. pepper 
- 1 1/2 cups chicken stock or bone broth 
- 2 tsp dried parsley 
- 1 cup milk or cream 
- 1-2 cups chicken, diced 
Melt butter or fat; blend in flour, salt, and pepper. Cook over low heat until smooth and bubbly. Stir in stock and milk with wire whisk. Slowly bring to a boil, stirring constantly until the mixture thickens. Add in the chicken and parsley. Serve over hot biscuits, waffles, rice, mashed potatoes, or toast.
